Schäufele: Bavarian food not to be missed

Let's play association of thoughts: I will tell you the name of a state and you will answer a typical and traditional dish: Germany...

I am sure that in the variety of associations that have been made, most consist of a plate of meat and potatoes. A steaming baked, or perhaps boiled, shin...accompanied by roast potatoes, a bratwurst with chips, a slice of "leberkäse" between two fragrant slices of bread accompanied by a potato salad?

From any animal origin, and in any season, meat with potatoes is the king dish of the German tables. Bavaria obviously maintains Germany's reputation with some really hearty meat dishes, and on our Bavarian weekend, among the Christmas markets of the North, we discovered a variation of the roast with potatoes that has earned the first place among our favorite German dishes.

The locals call it Fränkisches Schäufele mit Klöße, which for us common people is translated as roast pork with crunchy crust and potato dumplings.

There is not much to specify after the name: the roast is pork shoulder with bone, extremely tender and buttery, with a very crispy crunchy rind, accompanied by a thick sauce and a pair of glutinous potatoes-gnocchi. Excellent for an energetic winter dinner.

A place to sample an excellent version of this dish is the Gasthaus zum Schmied, a restaurant in the middle of the countryside near Lehrberg. The photos on the web are not very inviting, but the food was really excellent.
